Pumkin Pie Cake

- Preheat oven to 350F.
- In a large bowl, combine 1 1/2 cups canned pure pumpkin and 2 large eggs and whisk until well combined.
- Slowly add in 1 cup of whole milk and 1/2 cup of pure maple syrup, along with 1 Tbsp of all purpose flour, 1 tsp ground cinnamon, 1/2 tsp ground ginger and 1/4 tsp salt.
- Whisk until smooth.
- Pour your filling into a 9-inch baked pie crust and bake until the centre the just set, about an hour.
- Transfer to a wire rack and let it cool completely. When ready to serve, top with whipped Italian meringue and torch for an extra toasty flavor!
