Gingersnap Dessert Platter – GINGER SNAPS! (aka: Sugared Ginger Cookies)
Ingredients
2 cups All Purpose Flour
2 tsp Baking Soda
2 tsp Ground Ginger
½ tsp Salt
¾ cup Unsalted Butter, Room Temperature
2 cups, Granulated Sugar (divided)
¼ cup Molasses
1 Egg, Room Temperature
1 tsp Vanilla Extract
Instructions
Combine flour with baking soda, ground ginger and salt in a small bowl and set aside.
Using a stand mixer fitted with the paddle attachment, beat the butter with 1 cup of sugar and the molasses on medium speed until smooth, about 2 minutes. Scrape down the sides of the bowl, then add the egg and vanilla until almost combined.
On medium-low speed, add the flour mixture and continue to mix until the dough just comes together. Be careful not to overmix. Chill the dough for about an hour, or until the dough can easily be rolled into…
